Fast, easy, seasonal & delicious - Unlock the Secrets of Quinoa

Great for Breakfast, Lunch or Dinner

The key to this dish is it’s versatility and spontaneity. It is intended to bend with the harvest season. As you gather the crops in your garden or purchase produce from your local farmers market;

you can build a dish of healthy and delicious food for your family relatively inexpensively all year.


Need some tips on what to purchase at the market?
Here are some tasty seasonal combos:

Spring:
Sauteed Spinach, broccoli, with Bacon topped with Feta!
Mid Summer:
Steamed grean beans with sauteed cherry tomatoes, Chevre and shredded chicken
Sauteed Zucchini, yellow squash, green pepper, blueberries, Feta, Bacon or pork
Late Summer
Sauteed Apples, Green pepper, any kind of squash yellow or Zucchini , feta Pork chops
Or just saute any veggie combo and try it, it’s likely to be a tasty experiment!

What is quinoa:
Although not a common item in most kitchens today, quinoa is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. Quinoa is available in your local health food stores throughout the year.
A recently rediscovered ancient "grain" native to South America, quinoa was once called "the gold of the Incas," who recognized its value in increasing the stamina of their warriors. Not only is quinoa high in protein, but the protein it supplies is complete protein, meaning that it includes all nine essential amino acids. Not only is quinoa's amino acid profile well balanced, making it a good choice for vegans concerned about adequate protein intake, but quinoa is especially well-endowed with the amino acid lysine, which is essential for tissue growth and repair.

Harvest Quinoa Hash:
1 cups uncooked Quinoa
1lb of Hickory Acres No-No bacon, 1-2lbs of Hickory Acres chicken breast bone in,
1 Hickory Acres pork chop per person
Olive oil

Seasonal fruits and vegetables equal to 6 cups:
apples peeled, cored and sliced 1/4 inch thick
bunch of Asparagus cut ends off
zuchinini slice in 1/4 disks
yellow slice in 1/4 disks
green beans whole
cherry tomatoes whole
green peppers sliced 1/4 inch thick
brocoili florets
banana pepper sliced 1/4 inch thick
blueberries whole
peaches sliced 1/4 inch thick
etc...

Cheeses to consider:
Lake Erie Creamery Chevre
Others to consider and Try:
Lake Erie Creamery Feta (goes great with the Pork)
Crumbled cheddar or colby

Possible Herbs and Spices:
1 tsp Chili pepper
1 tsp Cinnamon
1tbs fresh thyme
1 tbs Rosemary
1 tbs Cilantro
dash Salt and 1tsp cracked pepper

Directions:
Cook Quinoa according to package.
Prepare bacon in skillet
Roast, broil or Grill Chicken
Broil or Grill Pork
Saute fruits and vegetables add spices

Serves Four

  1. I made this yesterday with Kissel Farms tomatoes, 3 garden fresh basil varieties, and fresh mozz pearls - mmm, mmm, mmm. So very versatile.
